Through his dishes, Ludovico De Vivo tells the story of the volcanic earth and the seas of Salina. An inspired chef from Southern Italy, De Vivo dedicates time and attention to curating the fertile gardens around Capofaro Locanda & Malvasia, giving way to a menu that is decidedly ethical and clean, marked with flavors from the gastronomic traditions of the Tasca d’Almerita family and the ever-present touch from the Aeolian islands. Originally from the Campania region, his cooking on the island of Salina is an delightful interpretation of Sicilian cuisine. Though ageless with energy, De Vivo has several important international experiences at his back, from Spain to England, with an impressive and decisive stint at Noma in Copenhagen.
