Pietro La Torre discovered a passion for cooking at an early age, when his family gathered around the stove on Sundays. Moving to Germany, he began working in his first professional kitchen at the age of fourteen. A trip to Canicattì, Sicily, changed his life: during his sister's wedding, he met Milena, who became his wife and mainstay. In 2021, Pietro opened Aquanova [The House of Water], a restaurant that rehabilitates the former splendor of a historic building in Canicattì. Hand-ground grains, vegetables from the garden, and the recovery of waste enrich the menus, respecting the environment and peasant traditions. Aquanova's cuisine evokes childhood memories with simple ingredients that celebrate Sicily and Puglia.

The place where over 2400 wine labels rest

Aquanova's wine cellar is the restaurant's flagship, housing more than 2,400 wine labels from around the world, with a special emphasis on Sicily. Located on the original site of the terracotta brick tanks, restored over two years, it has been transformed into a wine temple for wine enthusiasts.
The original arched roof perfectly frames this modern winery that honors tradition. The wine selection ranges from Sicily to northern Italy, France to South America and Australia, offering a unique sensory journey. This journey begins in Canicattì, land of grapes and wine, and invites you to discover distant lands through their distinctive flavors.

His father's simple Apulian cuisine was his first love, the spark that ignited dreams and ambitions: to work to excite and thrill. Moving to Germany as a child, at age fourteen he began working in his first professional kitchen, with the goal of learning every culinary secret.
A trip to Sicily in Canicattì changed his life permanently. During his sister's wedding at age sixteen, he met Milena, who a few years later became his wife and mainstay. At eighteen, Pietro moved to Canicattì, marking the beginning of a new adventure that would lead him to become a renowned chef.
