Mauricio Zillo, Executive Chef of the Gagini Restaurant, was born in São Paulo, Brazil, in 1980. He arrived in Italy in 2011, in Milan, after having expanded his baggage thanks to the experiences alongside Chefs such as Bocuse, Atala, Arzak and Santamaria. However, it will be his collaborations with Pont De Ferr, with the chef Matias Perdono, and with Rebelot, where he himself occupies the role of first chef, which will officially sanction his love for Italy, its cuisine and its products.
This passion will accompany him all the way to Paris, to his restaurant ‘A Mere’, a small sliver of the southern hemisphere in the 10th arrondissement of Paris. Then follows a brief Spanish parenthesis and a wandering year between the countries and cuisines of the planet, before returning to Italy in 2020, this time in Palermo, Sicily, within the walls of the Gagini restaurant. And it is here that he seizes the opportunity to mix international cultures and languages ​​with ease together with an authentic Sicilian spirit.
In 2021, as Chef of Gagini, the Michelin guide awards him a star, the most important recognition in the gastronomic field, launching him into the limelight of the global fine dining scene.
