We keep wines that speak of our territory

An area dedicated only to wine. Our cellar is found adjacent to the resort, a silent place to store bottles that speak of our territory, of an Etna that captivates us with its many moods, its vineyards proof of an ever-changing story, its native vines now at the attention of wine lovers and sommeliers from all over the world. Naturally, there is no shortage of other national and international wines including important maisons of Champagne.
Born in Linguaglossa, after many tours and experiences, he returned to his hometown to live and work at the restaurant of the Pennisi family's Shalai resort, obtaining his first Michelin Star in 2015. Giovanni Santoro began his 'tours' between Abruzzo, Lazio and Emilia Romagna, until he decided to return to Sicily to the court of Pino Cuttaia. The meeting with the Pennisi family is so decisive that he becomes Executive Chef of Shalai.
